My Favorite Zucchini Bread Recipe



1 1/2 c. grated zucchini
1/2 c. maple syrup
1/2 c. melted butter
2 eggs
1 t. vanilla
1 1/2 c. flour
1/2 t. baking soda
1/2 t. baking powder
1/2 t. salt
1 1/2 t. cinnamon
1/4 t. nutmeg
1/2 c. chopped nuts

I just combine all of the ingredients and pour into a greased bread pan and bake at 350 degrees for about 45 - 55 minutes.

  1. Thank you for that! In Britain zucchini is called "courgette" and no-one makes cakes out of it, so I'm really happy to find this recipe. Growing up in the States my parents always had an overflow of zucchini and we had stuffed zucchini and lots of zucchini bread.

    1. Incredible zucchini cake is a dark chocolate zucchini - YUMMM with a glass of milk or thinly sliced with a scoop of vanilla ice cream on it - best way to end the day :-)

  2. Actually people do make do make cakes out of courgette in Britain myself included,it is not very common but it is done-I especially make muffins with lemon and sultana

  3. Well I'm in the UK and I make cake with courgette in it. Very similar to carrot cake in fact, and it's scrummy. :D
