A Low Sugar Treat



I have been on my new eating regimine of no/low sugar and no whites - white flour, white pasta, white rice - for about two weeks now and I do feel much better.  Honestly, my mood seems to stay more consistent throughout the day.  My energy level is higher even when not getting enough sleep because of a certain night nursing girl lately.

I realized that I was consuming far too much sugar and white flours - often having a bit of dessert after each meal - either a cookie or a piece of cake - all homemade but all having sugar.
I have had a baby size icecream once.  But other than that I have used this or a variation of, to satisfy my sweet tooth just a bit.

1/2 cup cocunut oil, melted
1/4 cup maple syrup
3/4 cup oats
3/4 cup whole what flour or millet flour
1 cup finely chopped walnuts or almonds (chopped in a food processor)
1/2 teaspoon sea salt
1/2 teaspoon vanilla
1/2 teaspoon cinnamon

Combine all.  Press into the bottom of a buttered glass pie plate.  Bake at 350 degrees for 10 minutes.  Take out of the oven and add a light layer of jam.  Continue baking for about 20 more minutes.

Not using plastic wrap, I just keep it covered with a pretty linen.

    Your desert sounds yummy!! I am glad you are feeling better and have more energy...I know I feel a lot better without sugar...I wish I could give up all meats but I can't. We do eat organic meat....but I know I would feel even better without it.

    I keeping thinking it might be my age...so many things bother me more now than when I was younger. I am trying hard to grow older gracefully...smile..

  2. Oh that sounds delicious! I have been trying to cut way back (remove) sugar and all "whites" too, I just have so little energy and feel terribly moody so often. I know this will help, but it is difficult when the rest of the family wants something sweet... And I am the main meal provider. So I make goodies for them and try to ignore the yummy smells! This looks like a great solution!

      I did make chocolate chip cookies for the rest of my family today - I use whole wheat flour and oats - but they do have brown sugar - so I will not be having any.

  3. Tonya, Your reminders of how sugars affect a person's body are timely. My sweet tooth is a little excessive right now, and I know in my heart and soul I have to do something about it. Thanks for the boost...and recipes!

  4. I can't wait to try this after dinner tonight. I too have given up whites in my diet and am feeling so much better.
    I don't use plastic wrap either. I took a little bees wax and melted it over some cotton muslin to make my own wrap, it works great.

  5. OH, Yum...I have been sugar free/Low sugar (if someone slips it in) for years. I use Agave in everything that requires sugar.

  6. sounds really yummy Tonya, I'll be giving this one at try for sure! I thought of you and your family this past weekend as we visited friends and family in VT. Our daughter goes to camp every summer and I miss it so.

  7. Thanks for sharing this; we are enjoying it, and it was a good way to use up some jam that was too runny. It firmed up with the heat of the oven. This recipe is actually similar to the topping I use for my fruit crisps:
    1/2 c. rolled oats
    1/2 c. whole wheat pastry flour
    1/2 c. chopt walnuts or pecans
    pinch salt
    3 Tbl. canola oil
    2 Tbl. maple syrup
    This makes enough for a pie plate sized crisp. If I use a 9x9 square pan, I double it. If the filling is fairly dry (eg apples), I cover to cook except for the last 10 minutes.

    i'm making cookies - oats, flour, coconut oil, spices, carob chips or very very dark chocolate chips, perhaps a very small bit of stevia, baking soda... there are lots of recipes around for candida (no sugar) diet cookies and they are actually quite yummy!

    and if you like rhubarb, i blogged recently about a broiled rhubarb piece recipe I really like, it tastes just like candy :)

  9. That looks delicious! I'm trying to eat less sugar, too - I'll have to give that a try. In the evenings after the boys are in bed I almost always find myself craving something to eat - generally something sweet. My compromise for a while (instead of the ice cream I used to have...) has been granola, sometimes with a bit of dried fruit. But variety is good, and this would be something a little extra special. Thanks for sharing!
